Auld Holland Inn Joe and Elisa Franssen were born in the southern part of Holland, in the Province Of Zuid Limburg. They have three sons, Peter, Carl and Michael, all born in The United States. Their family has increased with the marriage of their sons and at last count they have 11 grandchildren and one great-grandchild.

Joe and Elisa moved to Australia in 1954 and in 1958 they came to live in the United States originally settling in, Seattle, Washington. In 1970 they and their children moved to Oak Harbor and acquired the Suncrest Motel. With the City's Dutch heritage in mind the landmark windmill was built, the motel enlarged and the name changed to the AULD HOLLAND INN.

In October of 1984 they designed and built, KASTEEL FRANSSEN, a charming European style restaurant designed after the old castles in the Province of Zuid Limburg. The KASTEEL was built adjacent to the AULD HOLLAND. Joe and Elisa's long time friend, Master Chef Jean-Paul Combetttes, agreed to come out of retirement and join them. In 1992, when Jean-Paul again wished to enter retirement, Executive Chef Scott Fraser came aboard adding his own distinctive touch. Chef Fraser was trained in classic French cooking in Vancouver, Canada at the Pierre Dubrulle Culinary School of Arts.
